Opah, otherwise known as moonfish, offers a rich creamy taste and firm texture. It is the only currently known warm-blooded fish. Nutritionally, it provides an excellent source of protein, B vitamins, and healthy fats.
Lemon, thyme, and parsley form an aromatic combination that pairs especially well with seafood. Citrus fruits are currently in their seasonal prime, and the zest, or thinly peeled skin, provides excellent flavour without the acidity of the juice. Lemon zest is rich in antioxidants such as Vitamin C and D-limonene, which provide multiple substantial health benefits.
