Vanilla Bean Roasted Pears

Serves 4

Ingredients

  • ⅛ cup of coconut sugar
  • ½ vanilla bean
  • 1 ½ lbs of slightly under ripe, but fragrant, pears.  Halved through the stem and cored.
  • 2 Tbsp lemon juice
  • 2 Tbsp water
  • 2 Tbsp coconut oil or unsalted butter
  • 2 Tbsp pistachios or sliced almonds (optional)

Directions

Preheat the oven to 375F.

Add coconut sugar to a small bowl.  Split the vanilla mean lengthwise in half with a sharp knife and scrape out the seeds.  Stir seeds into the coconut sugar and set the remaining bean pod aside.

Place pears in a baking dish, cut side up.  Drizzle with lemon juice and sprinkle with the vanilla seed coconut sugar.  Add the vanilla bean pod to the dish.  Pour water into bottom of the baking dish and divide the coconut oil or butter among the pears.

Roast pears for 30 minutes, ideally brushing them occasionally with the juices in the pan.  Turn pears cut side down and continue roasting for another 25-30 minutes, until tender and carmelized.

Serve warm over plain or vanilla yogurt, with a scoop of ice cream, or on their own.  Sprinkle with pistachios or sliced almonds to add a little texture.
